For the idli batter

  • 1 cup rice
  • 1/2 cup urad dal (black gram lentils)
  • Salt to taste

For the beetroot stuffing

  • 1 medium beetroot, grated
  • 1 packet of Maggi noodles
  • 1 tablespoon oil
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • Salt and pepper to taste
  • Chopped coriander leaves for garnish


  1. To make the idli batter, soak the rice and urad dal separately in water for 4-6 hours. Drain the water, then grind each to a smooth paste individually. Combine the two pastes, add salt, and let the mixture ferment overnight.
  2. Cook the Maggi noodles as per the packet instructions. Drain and set aside.  
  3. Heat oil in a pan and add mustard seeds along with cumin seeds.Let them splutter.
  4. Add the grated beetroot to the pan and sauté for several minutes.
  5. Add turmeric powder, salt, and pepper to the pan. Mix well.
  6. Add the cooked Maggi noodles to the beetroot mixture and toss to combine.
  7. Grease the idli molds and spoon a small amount of idli batter into each mold, filling it halfway.
  8. Place a spoonful of the beetroot Maggi mixture on top of the batter in each mold.
  9. Cover the beetroot mixture with more idli batter, filling the molds completely.
  10. Steam the idlis for 10-12 minutes, or until a toothpick inserted into the center comes out clean.
  11. Remove the idlis from the steamer and let them cool slightly before unmolding.
  12. Garnish with chopped coriander leaves and serve warm.
